Quick & Easy Meals

I don’t know about you but I do not feel like cooking some nights, AT ALL.  Simple prep, assembling and heating things up is the only thing on the menu.  Here are some ideas for quick meals that are filling and don’t take a lot of time to put together

  • Franks & Beans

    Franks & Beans are a comfort food for both my husband and I.  We both have fond memories of eating it as children and IN the same way, which is cool.

    Buttered bread with sliced hot dog IN the beans on top.  Just YUM.  We will sometimes add a veg on the side because we never feel right without a veggie.

    So get some hot dogs as they keep quite a while in the fridge.  Add your favorite baked beans to your shopping list, if you don’t already have them in the pantry.

  • Grilled Ham & Cheese w/Soup


    Grilled cheese with ham & tomato.  This is another quick meal that is very satisfying. If you are really hungry, put on some soup to go with it.  Tomato works fabulously but any soup you prefer makes it a filling meal.  I keep extra soup leftovers in the freezer but we have canned as well.

    DO NOT skimp on the cheese.  Top and bottom layers of cheese is a must.

    Crispy on the outside, soft & gooey on the inside. What’s not to like?

  • Oven Taquitoes


    Just about everyone in the house has loved these from the day I tried making them.  I fried them at first, quickly realizing that I didn’t have the patience or time to make them this way.  Then I just rolled them in oil, sprinkled more on top and baked them in a pan at a high heat.  And yes, my favorite saying, “voila”.  🙂

    All you need is a rotisserie chicken (pulled) or leftovers, softened cream cheese, salsa and/or a can of chilis and a little bit of grated Mexican cheese. You can also make these with ham instead of chicken.  I put all the ingredients in a bowl, roll up in a Giant burrito with some more shredded cheese.  I put some oil in a baking dish and roll each one around in the oil and line up in the pan.

  • French Bread Pizzas


    Those same French Breads from Costco work here.  Very simple and fun.

    I cut them in half lengthwise.  Muster up some jarred sauce, toppings and have some fun with the family assembling at the table.

    I purchased some deli pepperoni, ham, sautéed up some mushrooms & onions, chopped some peppers, jalapeños and grated mozzarella. It was not only a blast but YUMMY.

    This is a great family activity as well as a simple meal!

  • Fish Sandwiches


    If you like fish, you’ll love these fish sandwiches almost as much as you’ll love the lack of time/work involved.

    We had fish sticks in the freezer so that’s what we used but you can use fish filets as well. I usually keep homemade tarter sauce in the fridge or can make a quick batch as it elevates this sandwich.

    And as I’ve mentioned, we don’t feel right unless we have veggies too.  I find dumping an entire large Costco container of spinach into my largest pan on the stove and cooking it down is super easy and super tasty.  I had roasted cauliflower as leftovers in this pic so we ate that as well.

Granitestone Pan

I love these Granitestone pans and have them in several sizes. They ARE induction pans but can be used on regular ovens (double check for your oven) but I love how flat the bottom of the pan is. These hold up to daily use and you are supposed to be able to use metal utensils with them (which we do sparingly, just in case).

Silicon Spatulas
